Preheat the oven to 350ºF. Combine the parsley, paprika, butter, salt, pepper and garlic in a small saucepan. Heat over a low heat until the butter melts and starts to simmer. Remove from the heat and brush some of this mixture in the bottom of a shallow baking dish lined with tinfoil. Place the tilapia fillets in the butter. Brush the top of each fillet with the seasoned butter.
Bake for 12 to 15 or until the fish flakes easily with a fork. Serve with a mixed salad (mixed greens, tomatoes and scallions for example). Just about any white wine goes well with this dish. You could even try a medium sweet German wine, since the relative sweetness brings out the tilapia flavor.
