Salmon Croquettes

Salmon croquettes can be shop bought or homemade but nothing beats the homemade taste. In addition to that, using recipes for salmon patties croquettes means you know exactly what goes into the recipe. This recipe uses cracker crumbs for a tasty crispy coating and you can fry the salmon croquettes in just a few minutes.

Canned salmon, rather than fresh salmon, is used in this recipe for salmon croquettes because, with the egg, lemon juice, milk and cracker crumbs added, it gives a strong, pleasing flavor. These croquettes are delicious served with mashed or boiled potatoes and seasonal vegetables. Some tartar sauce on the side is also a nice touch.

Ingredients -
 
1 can salmon
½ cup cracker crumbs
1 beaten egg
½ cup milk
1 teaspoon lemon juice
 
Preparation:
 

Drain the salmon and put it in a bowl.

Pick out any big bones.

Add the lemon juice, egg and enough cracker crumbs to make the mixture sticky.

Mold it in to oval shapes and dip them in milk.

Roll them in cracker crumbs and fry them in ½ inch of hot oil until browned all over.

Serves 4
