Mix the onion, garlic and oil in a 1 ½ quart microwave-safe dish.
Cover the dish and cook on high power for 3 minutes then drain.
Stir in the cinnamon, salsa and tomatoes and top with the olives and red snapper fillets.
Cover and microwave for about 3 minutes on high or until you can flake the snapper easily using a fork.
Garnish with chopped parsley and serve.
