Lemon Parsley Halibut

Halibut recipes, like many other fish recipes, vary from the very easy to the very complicated. Quite often though, with halibut recipes, the best results come from the simplest recipes. This one uses just four ingredients but the finished halibut comes out really well.

The fish needs to be marinated after you have added the lemon juice, parsley and freshly ground black pepper for the flavors to soak into the flesh of the fish. This halibut recipe is nice served with broccoli or a similar vegetable. You might want to use lime juice instead of lemon juice, or half lemon juice and half lime juice. Parsley complements many kinds of fish and halibut is no exception.

Ingredients -
 
4 halibut fillets (6 oz each)
Juice and zest from 1 lemon
¼ cup finely chopped fresh parsley
½ teaspoon black pepper
Nonstick cooking spray
 
Preparation:
 

Put the fish in a big glass dish skin side down and sprinkle the lemon zest and parsley over the top.

Squeeze the lemon juice over it, and then add the black pepper. Chill for 12 minutes.

Preheat the broiler and spray nonstick cooking spray on the broiler pan.

Take the halibut out of the glass dish and put in on the broiler pan skin side down.

Broil for about 9 minutes.

The time depends on how thick the fish is. 10 minutes per inch is a good guideline.

Serve the lemon parsley halibut with wild rice and mushrooms or with a rice pilaf.
