Herb Nut Crusted Salmon Fillets

These baked salmon fillets are heavenly because of their delicious, crispy crumb coating. You can use a food processor to prepare the coating so this is also a very quick recipe to make. You can serve these baked salmon fillets with rice or smashed potatoes, and also with broccoli or a similar vegetable.

The whole meal bread and walnuts give the fish a very wholesome flavor and the orange and nutmeg add an interesting, zesty tang. Tartar sauce goes very well with this recipe. Alternatively you can serve it with homemade garlic mayonnaise. A wedge of lemon or lime on the side is usually very nice with fish recipes but, for this one, a wedge of orange would be delicious, since orange zest is used in the breadcrumb recipe.

Ingredients -
 
4 salmon fillets (6 oz each)
6 oz whole wheat bread
3 tablespoons chopped fresh chives
3 oz butter
3 tablespoons chopped fresh parsley
⅛ teaspoon ground nutmeg
1 beaten egg yolk
1 tablespoon black pepper
Finely grated zest from 1 orange
2 oz coarsely chopped walnuts
Broccoli, to serve
Tartar sauce (optional)
 
Preparation:
 

Preheat the oven to 350 degrees F.

Make crumbs out of the bread in a food processor, then mix with the nutmeg, herbs, orange zest and walnuts.

Melt the butter over a moderate to high heat, and then add the crumb mixture.

Cook until the crumbs are turning golden brown and the butter is absorbed.

Set this mixture to one side to cool.

Rub the pepper over the salmon fillets and put them on a baking tray skin side down.

Brush the beaten egg over the fish and press on the crumb mixture.

Bake for about 18 minutes or until the crumbs are crispy and the fish is opaque.

Serve with broccoli and tartar sauce if liked.
