Preheat the oven to 350 degrees F.
Make crumbs out of the bread in a food processor, then mix with the nutmeg, herbs, orange zest and walnuts.
Melt the butter over a moderate to high heat, and then add the crumb mixture.
Cook until the crumbs are turning golden brown and the butter is absorbed.
Set this mixture to one side to cool.
Rub the pepper over the salmon fillets and put them on a baking tray skin side down.
Brush the beaten egg over the fish and press on the crumb mixture.
Bake for about 18 minutes or until the crumbs are crispy and the fish is opaque.
Serve with broccoli and tartar sauce if liked.
