Grilled Red Snapper With Mango Salsa And Lime

If you want to cook your fish outdoors, then a grilled red snapper recipe is ideal. With the following recipe, the snapper is oiled and spiced before being easily grilled to perfection. It is served with a deliciously fruity, tangy salsa.

This grilled red snapper recipe is perfect when served with plenty of homemade green salad and a bottle of Sauvignon Blanc. If you like your food extra spicy, you might want to use more chili powder when you coat the fish. The salsa is best left soft and fruity rather than too spicy.

Ingredients -
 
4 red snapper fillets
¼ teaspoon cinnamon
2 tablespoons olive oil
¼ teaspoon salt
2 ½ teaspoons ancho chili powder

For the Mango Salsa:

½ cup diced red onion
1 ½ cups diced mango
2 teaspoons lime zest
½ cup roughly chopped cilantro
½ cup diced red onion
¼ teaspoon salt
3 tablespoons lime juice
2 teaspoons minced de-seeded Serrano chili pepper

 
Preparation:
 

Combine all the salsa ingredients well and chill the salsa for 20 minutes.

Preheat the grill.

Combine the salt, cinnamon and chili powder.

Put the fish on a baking tray skin side down and brush half the oil over it.

Sprinkle half the spice mixture over that.

Put the fish skin side up on the grill and brush the rest of the oil over it.

Sprinkle the rest of the spice mixture over the top.

Grill for 4 minutes, then turn the fish over and grill for 4 more minutes or until the center is just opaque.

Serve with salad and the mango salsa as well as a few lime wedges.
