Preheat the grill to a moderately high heat.
Add half a cup of rice to the middle of each of 4 pieces of heavy duty foil which are about 18 inches square.
If you don't have heavy duty foil you can use a double layer of regular foil.
Pour half a cup of warm water over each one, and then put a halibut fillet on top.
Arrange the baby spinach leaves around the fish.
Spoon the vinaigrette over the spinach and fish then bring the foil sides up, double folding the top and ends to make sure they are well sealed.
Leave some space inside each foil packet for the heat to circulate.
Grill the packets for 10 minutes then put each one on a serving plate.
Cut slits in the foil to let the steam escape before you open them.
Sprinkle some parmesan over each serving.
