Foil Pack Halibut Florentine

When it comes to halibut recipes, some are simple and others are complicated. The following recipe is very easy to prepare and looks great served "en papillote" (served in the foil wrap). This is a very nutritionally balanced recipe which is low in fat and carbs so if you're watching your weight, this is a delicious treat of a meal meaning you won't feel deprived.

If you can't find sun-dried tomato vinaigrette dressing you can use a different vinaigrette dressing and perhaps mix a tiny amount of tomato puree or finely chopped sun-dried tomatoes into it before using. Don't skimp with the parmesan either, as it really does bring out the tasty flavor of the whole dish.

Ingredients -
 
4 skinless halibut fillets (4 oz each)
2 cups warm water
2 cups instant white rice
1 tablespoon grated parmesan
½ cup sun-dried tomato vinaigrette
4 cups fresh baby spinach leaves
 
Preparation:
 

Preheat the grill to a moderately high heat.

Add half a cup of rice to the middle of each of 4 pieces of heavy duty foil which are about 18 inches square.

If you don't have heavy duty foil you can use a double layer of regular foil.

Pour half a cup of warm water over each one, and then put a halibut fillet on top.

Arrange the baby spinach leaves around the fish.

Spoon the vinaigrette over the spinach and fish then bring the foil sides up, double folding the top and ends to make sure they are well sealed.

Leave some space inside each foil packet for the heat to circulate.

Grill the packets for 10 minutes then put each one on a serving plate.

Cut slits in the foil to let the steam escape before you open them.

Sprinkle some parmesan over each serving.
