Preheat the oven to 500 degrees F.
Use aluminum foil to line a pair of rimmed baking sheets.
Toss the zucchini with the olive oil, salt and pepper and lay it on one side of one of the baking sheets.
Put the salmon fillets on the other side of this baking sheet and spread the mustard spread over it.
Put the French fries on the other baking sheet and toss them with the paprika and cheese.
Roast everything for 10 minutes or until the fish is cooked.
Transfer the fish to a serving platter.
Add the tomatoes to the pan with the zucchini.
Toss the fries again. Put both pans back in the oven for 5 minutes or until the zucchini is tender and the French fries are crisp.
Serve hot.
