Baked Citrus Cod Fish Tacos Recipe

This interesting, fruity fish taco recipe combines traditional Mexican recipe ingredients with the versatile taste of cod. The orange, lime, and pineapple very much enhances the cod taco filling. Citrus is often used in fish recipes because fish is generally light enough to support the flavor.

Fish tacos are sometimes made with mahi mahi, also called dolphin fish or dorado, but cod is great too because it is mild enough yet holds its shape when cooking. If you are a taco fan and usually have beef tacos or chicken tacos, this sweet, tasty fish taco recipe will make a delicious change. Tacos are great served alone and these are so good that your guests will probably want two each!

Ingredients -
 
1½ lbs cod, cut into ¾ inch cubes
8 corn tortillas (6 inch diameter), warmed
11 oz can mandarin orange segments, drained and halved
1½ cups chopped fresh pineapple
1 envelope taco seasoning
3 tablespoons lime juice
3 cups shredded lettuce
1 jalapeño pepper, seeded and finely chopped
3 tablespoons orange juice concentrate
 
Preparation:
 

Combine the oranges, pineapple, 1 tablespoon of the taco seasoning, 1 tablespoon of the orange juice, the jalapeño pepper and 1 tablespoon of the lime juice in a large bowl. Cover and refrigerate.

Preheat the oven to 375ºF.

Place the fish in an ungreased shallow 2 quart baking dish. Combine the rest of the lime juice, taco seasoning and orange juice in a bowl. Pour this mixture over the fish and toss to coat. Cover and bake for 12 to 15 minutes or until you can flake the fish easily with a fork.

Place a spoonful of the fish mixture in each tortilla and top with lettuce and pineapple salsa. Roll them up to serve.
