Preheat the oven to 325 degrees F and cut the vegetables into big strips.
Roast them for about 20 minutes or until soft.
Mix the seasoning ingredients together and coat the salmon in this mixture.
Sear it in a very hot skillet until it reaches 145 degrees F. Serve the blackened salmon and roasted vegetables together.
Sprinkle the rosemary over the salmon as a garnish if you like.
