Cajun Blackened Salmon

With a blackened salmon recipe, you will find that it has a special, smoky flavor. Salmon is a very versatile fish and features in everything from creamy pasta dishes to tomato-based fish recipes. There are various ways to prepare salmon too and it can be eaten raw, smoked or cooked by frying, grilling, steaming, poaching or another method.

So, how do you make blackened salmon? You need to make a seasoning, coat the salmon in this and then sear it. You can change the seasoning ingredients if you prefer a spicier or less spicy blackened salmon recipe. This recipe contains potatoes and vegetables so you don't need to make a side dish. It is wonderful served with a dry white wine, such as Californian Chardonnay.

Ingredients -
 
1 green bell pepper
1 carrot
1 red bell pepper
2 new potatoes
5 oz salmon fillet
1 zucchini
1 teaspoon fresh rosemary (optional)

For the Seasoning:

1 tablespoon garlic
1 teaspoon basil
1 teaspoon thyme
1 tablespoon paprika
1 tablespoon white pepper
1 tablespoon red pepper
1 tablespoon black pepper

 
Preparation:
 

Preheat the oven to 325 degrees F and cut the vegetables into big strips.

Roast them for about 20 minutes or until soft.

Mix the seasoning ingredients together and coat the salmon in this mixture.

Sear it in a very hot skillet until it reaches 145 degrees F. Serve the blackened salmon and roasted vegetables together.

Sprinkle the rosemary over the salmon as a garnish if you like.
