Baked Dijon Salmon

Salmon is a very popular fish and there are many baked salmon recipes to choose from. The following baked salmon recipe is quite simple but fish sauces are often simple because a heavy sauce would detract from the delicate flavor of the fish.

Baked salmon recipes frequently feature lemon and parsley, since they go so well with the fish. In the following recipe, the honey and mustard further enhance the flavor and the pecans and breadcrumbs add an interesting texture. When making baked salmon recipes, you will find the fish to be ready as soon as you flake it with a fork. Salmon does not take long to cook but it can dry out if you are not watching it.

Ingredients -
 
4 salmon fillets (4 oz each)
3 tablespoons Dijon mustard
¼ cup melted butter
4 teaspoons chopped fresh parsley
¼ cup finely chopped pecan nuts
1 ½ tablespoons honey
1 lemon, cut into 4 wedges
¼ cup dry breadcrumbs
Salt and black pepper, to taste
 
Preparation:
 

Combine the honey, butter and mustard in one bowl.

Combine the pecans, parsley and breadcrumbs in another bowl.

Preheat the oven to 400 degrees F.

Brush the honey mustard mixture over the salmon and sprinkle the breadcrumb mixture on top.

Bake for about 14 minutes or until the salmon flakes easily when you use a fork.

Season with salt and black pepper and serve each salmon fillet with a lemon wedge.
