Preheat the oven to 350ºF.
Remove the skin from the steelhead, rinse and pat it dry.
Line a baking dish with foil and place the fish on this. Sprinkle over the dill, salt and pepper.
Place the onion and orange slices on top of the fillets.
Cover and seal the fillets in foil and bake for 30 to 45 minutes, depending on the thickness of the fillets.
